Our favourite brewing methods

Espresso Machine

Coffee 17-18g (ground fine) | 36-40g extraction | 27-30 sec

Grind 17-18g of coffee into the portafilter basket. Use your
finger to carefully level the surface. Tamp firmly and evenly, leaving 3-4mm of space at the top of the portafilter. purge the group head before locking the portafilter into the machine. Begin brewing straight away. Extract 36-40g of espresso over 27-30 seconds. Customise coffee to your preference.

Stove Top

Coffee 15g: 2 cups, 30g: 4 cups (Ground Fine) | 3-5 min

Load the basket with coffee grounds, leveling them to the rim. Pour hot water into the bottom chamber, keeping the level below the release valve, and screw the top on firmly. Set the pot on medium heat on the stove top, ensuring the brewing remains steady without spitting. Take it off the heat just before the extraction is complete, and cool the base quickly using a damp towel to stop the brewing.

Aeropress

Coffee 16-18g (ground medium) | 270-300g water | 3 min

Place the filter paper in the Aeropress, add 16g ground coffee, and pour in the water. Immediately place the plunger into the vessel to stop the extraction. Allow the coffee to brew for about 2 minutes, then press the plunger down gently and evenly for 30 seconds into your cup. Done!

Moccamaster

Coffee 60g per litre (ground medium-coarse) | 4-6 min

Place a filter paper in the brew basket and rinse with hot water to remove any paper taste. Add 60g of freshly ground coffee per litre of water, ensuring an even bed. Fill the water reservoir with fresh, filtered water.

Start the brewing process and allow the Moccamaster to do its work. The coffee should take around 4-6 minutes to brew. Once complete, give the brewed coffee a gentle stir in the carafe to ensure an even flavour before serving.
